Thursday!

Woo Hoo this week has gone quickly! And it's been a really good one. I've been able to get out so much more the last few weeks and it's amazing what that can do for your mood.

I'm painting a football themed room this afternoon. I love painting little girlie rooms, but it's always fun to do some major boyish stuff too.

Gee, guys. My gender vote count is 50/50. Duh. I could have figured that one out. :)

Rumor has it that we're going out to eat at Latin King this evening with some family. I hope the plan sticks! I've been wanting Italian food and I've only been to Latin King once and it was years ago. I don't really have any cravings, but if I see a certain food or read about it, I must have it or I will not survive. Yesterday it was Spinach and Artichoke dip. Now it's puppy chow. So here's a great recipe I got from my friend Jenn. I've used it a ton. It's so good!! (and easy)

Spinach and Artichoke Dip

1 cup artichoke hears chopped (1 can)
½ cup frozen spinach thawed
8 oz cream cheese
½ c grated Parmesan cheese
½ t crushed red pepper flakes (optional)
¼ t salt
1/8 t garlic powder

Boil spinach and artichoke hearts with 1 cup water in small saucepan over medium heat until tender. Drain excess water. You may need to squeeze it out so the dip isn’t runny. Heat cream cheese in a small bowl for 1 min until soft. Add spinach and artichokes and stir well. Add remaining ingredients and combine. Serve warm with crackers, chips or bread.

RJ's cousins are putting together a Charlton Family Cookbook for Christmas. His family is full of good cooks/bakers, so this is going to be amazing. I can't wait!

THANK YOU for posting Jenn's recipe! It is the best! I had gotten it a long time ago and I think I lost it (sorry Jenn!). I can't wait to make it! Have fun painting football fields and enjoying Latin King! Yum! Makes for a great entrance into Fabulous Friday!:)
P.S. Are you going to sell that Charlton cookbook!?!

That's how my "cravings" were, still are a little bit. I saw the Oreo cakester commercial like a million times one day when I was home sick and just I had to try one, Andy brought home a package that night!

I'm going to have to make that dip soon, it sounds good and so does the puppy chow now that you mentioned it :o)
